Product Description
Very lively cherry red with good depth. Complex aromas, outstanding notes of ripe red fruit (cherries, pillories with floral notes (violets …) and balsamic; soon emerge hints of cocoa, roasted coffee and spices on a mineral balancing at the same time fresh and sharp on the palate. this vintage has developed a singular great complexity, roundness and elegance, with sweet, velvety tannins that give it great smoothness; retronasal reappears subtle fruit, with notes of aging cast a long and tasty potsgusto.

100% Tempranillo.
Vineyards:
In Baños de Valdearados and Pesquera de Duero; 60 year old gobelets and 18 year old trellis.
Vintage:
Manually gathered, in 15 Kg boxes, the , October , 8h / 12 th ,2007.
Softening:
Kept cold for 7 days before fermentation and 25 days after it.
Fermentation:
Between 26º and 28º Celsius.
Ageing:
In subterranean cellar for 30 months, in new barrels French oak.
Settling:
In the barrel, with natural egg white.
Filtration:
Previous to bottling, which was carried out in june 2010.
